Carménère
is directly related to Cabernet Franc and shares its red fruit flavors and herbaceousness. Its thought to be Merlot when it was first transplanted into Chile but what makes it different is Carménère’s aromas in more savory flavors of black pepper, bell pepper, and cocoa powder. It is one of Chile’s treasured grapes. At the moment, the best wines are found in and around Colchagua, Cachapoal, and Maipo Valleys where wines are richer and more chocolatey.
Pais
is a light bodied red that is very much considered as the Beaujolais of Chile. Also known as the Mission grape and widely-planted. The wines are juicy with bright red fruit, roses, violet, sometimes dried meaty notes with crunchy tannins. Sometimes it's blended with Cinsault.
Cinsault
is a light bodied red that is "re-discovered" in the colder regions of Chile especially around Itata Valley. Chile Cinsault ranges from floral, red fruits driven to earthy, herbal and spicy.
Cabernet & Blends
Cabernet Sauvignon is the most widely planted grape in Chile with an elegant lighter colored, less tannic style, aromas of black cherry, plums, smoked bell pepper, mint and graphite. Chile also makes Bordeux Blends Chilean style with Cabernet Sauvignon, Merlot, Carménère, Petit Verdot, Malbec, and sometimes Syrah. They often feature rich flavors of plum and dried blackberry or raspberry, olives and pepper, minerals with a smoky finish.

Latin America have such a diversity in cuisines from Chilean, Peruvian, Mexican, Argentinian, French, Italian, Parrilla, even Chileno Chino. Lets hear from our local friends for their favorite pairing with their favorite regional cuisine.
Miguel, Sommelier, @thedeliriousfoodie | Carménère is a variety that pairs very well with Pastel de Choclo (Traditional Corn and Beef Casserole) and Empanada de Pino. Cordero Magallánico al palo (Roasted Lamb on stick) with a deep Syrah from the north or a Pastel de Jaiba with a structured Chardonnay.

Villard Wines

Viña VIK

Patagonia Chilena
A region encompassing the vast southernmost tip of South America, shared by Argentina and Chile, with the Andes Mountains as its dividing line. While travelling here is about 923km from Santiago, Patagonian wines are exquisite when you see it in the restaurants.
Casa Silva
Casa Silva | In 2006, the Silvas planted about five acres of Sauvignon Blanc, Chardonnay and Pinot Noir, also expanded into Riesling and traditional sparkling wines in Futrono, a hillside near Lake Ranco. Casa Silva is the first Chilean winery to produce wines from their own vineyards with the Designation of Origin “Austral”, in such a remote Southern Region.

Miguel Torres Chile
Miguel Torres Chile arrived in the Curicó Valley, Chile in 1979. His winery focused on fair trade, organic viticulture, and innovation. In 2018, it acquired 5,000 hectares in the province of Aysén, destined to the plantation of vines and forests.
